Mix-n-Match Apple Curry Salad

What I am eating for lunch today is something I call Mix-n-Match Apple Curry Salad.  You can mix and match any of the ingredients below to make a great salad that is good on either bread or a bed of lettuce.  Feel free to leave anything out you don't like (like the spices) or add more than one choice from each category.
You need:
  • A protein -- canned tuna or other fish, leftover shredded chicken
  • Veggies -- diced onions, celery, carrots, peppers, fennel 
  • Soft fruit -- currents, raisins, halved grapes, dried cranberries
  • Hard apple, diced small. A firm apple is key to give it crunch.
  • Nuts -- walnuts, almonds, or pecans
  • Mayo to taste
  • Spices -- curry powder or just turmeric, salt, cayenne pepper.
Today's salad was leftover from this weekend.  It had canned tuna, onions, raisins, a Macoun apple, walnuts, mayo, and all of the spices listed above.   A couple weeks ago it was leftover chicken, onions, fennel, apple, grapes, pecans, mayo, and turmeric only.  This is one of those recipes that tastes better if it sits overnight and keeps fine for a few days.  I pack it in individual containers after making it so we can grab and go during the week.
