I had some thoughts about leftovers that I wanted to share. (I think I am going to stop getting emails from a certain someone if I don't stop blogging about her emails. LOL!) You can see from my previous posts that one of my biggest strategies for meal planning is making double batches and using leftovers. I used to hate leftovers too but it became a necessity and sanity saver once John was home full-time. So anyway, some strategies and random thoughts I employ regarding leftovers:
- Make your spouse eat the leftovers in their lunch if you don't want to eat them. Or for dinner, sometimes I'm just not that hungry anyway and have an apple or eggs or something simple later when I do get hungry.
- Some things are good leftover and some things are not. Also known as, somethings freeze well and some things do not.
- Good: soups, stews, chilis, spaghetti sauce, casseroles usually all freeze well and make good leftovers.
- So-so: egg dishes can be questionable. Quiches generally do o.k. I haven't had good luck with frittatas. Pasta and pasta dishes are not that great IMO. The kids don't mind since they are just excited to get pasta. YMMV.
- Ugly: Lettuce salad? Alfredo sauce? Just say no to both. (I'm shaking my head at the computer.) Think fragile. Creamy things and whipped things are generally too fragile.
- How to know if it will be good leftover: 2 ways I know -- do you see the item in the freezer section of the store? Pizzas, lasagna, broccoli = yes. Cream and lettuce = no. Also, read the recipe: if it says serve immediately or not good leftover or best while piping hot and things along those lines, there's your cue. Conversely, if it says hot or room temperature or better as it sits or better the next day, it will usually freeze well and make good leftovers.
- Use leftovers in strategic reuse, such as:
- Meatloaf --> Meatloaf sandwiches, hot meatloaf and gravy openface
- Cooked chicken or turkey --> chicken enchiladas, chicken salad, chicken soup, chicken chili
- Mashed potatoes --> loaded baked potato soup, potato pancakes
- Bread --> croutons, breadcrumbs
- Egg whites --> stirred into scrambled eggs the next day, macaroon cookies
- Rice --> rice pudding, stirfry, rice salad
Hmmm.... what else? Anyone else have other leftover tips to share?
