One-pan Indian Sloppy Joes

One of our new favorites, simplified Karen style and changed for our allergies.  I don't know why this recipe is so many steps and so many pans.

One-pan Indian Sloppy Joes
1/2 cup unsalted,deshelled pistachios (can substitute unsalted cashews)

2-3. T. of oil
1 c. finely chopped onion
1 c. finely chopped red bell pepper
1 small jalapeno, deseeded or seeded, diced finely (we leave this out because the kids can't stand spicy)
2 cloves minced garlic
1 T. minced fresh ginger
1 lb. ground turkey, chicken, or beef.  Turkey is probably best.  We use chicken because John can't eat turkey.
Salt and pepper to taste
1-2 TBSP. of garam masala powder or curry powder (the recipe only calls for 1 t. plus paprika and cumin. I wasn't a fan because it was really bland in my opinion, feel free to substitute spices that your family likes.  Ground coriander is especially good.  Remember you can always add more spice at the end!)
1 small can of tomato paste
water if needed
1 can coconut milk
drizzle of honey
1/2 c. or more to taste of raisins

Chopped cilantro and buns (both optional)

Use a large, deep sided skillet.  Start by toasting the nuts in the dry pan until lightly toasted.  Remove from skillet and let cool on a plate.  Add oil, onion, peppers, garlic, and ginger to the pan and cook until a minute or two over medium heat. (The veggies will continue cooking with the meat.)  Add the meat and salt and pepper and cook until meat is thoroughly cooked and veggies are completely tender, approximately 7 minutes.  Create a well in the center of the pan and add the tomato paste.














Cook the tomato paste a minute or so to develop the flavors of the paste.  Add a bit of water if it gets too sticky or starts to burn.  Mix the tomato paste in and add the spices.  Stir in the coconut milk, drizzle of honey, and raisins.














 Reduce heat to low and let simmer a few minutes.  Taste and correct the seasonings if necessary.  Serve on buns or plain with the optional chopped cilantro.
